Green is back – from the trees, to the grass – all around us, green is here! To celebrate our favorite color being back, we’ve compiled a list of our favorite recipes to help with green, healthy living in true Santa Rita spirit.

Chopped Asian Chicken Salad

This refreshing dish is healthy and delicious.

CHOPPED ASIAN CHICKEN SALAD

INGREDIENTS

  • For the Ginger Marmalade Dressing:
  • 3 Tbsp rice vinegar
  • 3 Tbsp sweet chili sauce
  • 2 tsp sesame oil
  • 1 tsp soy sauce
  • 4 Tbsp orange marmalade, finely chop any large orange pieces
  • 2 tsp fresh ginger
  • 1 Tbsp honey
  • 1 Tbsp lime juice
  • ½ tsp kosher salt
  • For the Chopped Asian Chicken Salad:
  • 1 cup diced yellow or red bell pepper*
  • 1 cup carrot*, diced
  • 1 cup red cabbage*, diced
  • 6 medium green onion, thinly sliced, white and green parts
  • 2 cups diced rotisserie chicken breast*
  • 1 cup fresh cilantro, chopped
  • ¼ cup sesame seeds
  • ½ cup salted peanuts, roughly chopped

INSTRUCTIONS

  1. For the Ginger-Marmalade Dressing:
  2. Combine all dressing ingredients in a glass jar with a tight fitting lid. Shake vigorously until well combined. Set aside.
  3. For the Chopped Asian Chicken Salad:
  4. Combine all salad ingredients, except peanuts, in a large bowl and stir to combine.
  5. Drizzle with ½ cup of the dressing and toss to coat veggies and chicken with the dressing.
  6. Transfer to a serving platter or divide between 4 dinner-size plates. Sprinkle with chopped peanuts and pass extra dressing at the table.

NOTES

* All veggies, as well as chicken, should be chopped in approximately ¼ inch dice.
We like to use rotisserie chicken for this recipe, but any lean poultry would work well.

Lean Green Power Salad

INGREDIENTS:

4 cups chopped kale

1 avocado, diced

1/2 cup cooked quinoa

1/2 cup pomegranate seeds

1/2 cup chopped pecans

1/4 cup crumbled goat cheese

For the Meyer lemon vinaigrette:

1/4 cup olive oil

1/4 cup apple cider vinegar

Zest of 1 Meyer lemon

3 tablespoons freshly squeezed Meyer lemon juice

1 tablespoon agave

DIRECTIONS:

  1. To make the vinaigrette, whisk together olive oil, apple cider vinegar, Meyer lemon zest and juice, and agave in a small bowl; set aside.
  2. To assemble the salad, place kale in a large bowl; top with avocado, quinoa, pomegranate seeds, pecans and goat cheese. Pour the dressing on top of the salad and gently toss to combine. Serve immediately.

Broccoli Taco Bowl

This gluten-free dish will help you stay on track with your goals!

INGREDIENTS

4-oz lean ground hamburger

1-oz shredded cheddar cheese

1¼ cup broccoli, cut into bite sized pieces

¼ cup Rotel tomatoes

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon salt, divided

pinch of red pepper flakes

2 tablespoons low sodium chicken stock

DIRECTIONS

Put your broccoli in a bowl with your chicken stock and cover with plastic wrap. Put in the microwave for 4 minutes, or until tender and cooked.

In a large skillet brown your hamburger and drain the grease if needed when it’s done.

Add your Rotel tomatoes, garlic powder, onion powder, salt, and red pepper flakes and stir well.

When your broccoli is finished cooking then add it to your skillet and toss with the hamburger mixture.
