We’re SPICING things up at Santa Rita Ranch!

GET INSPIRED for Cinco De Mayo this Friday and have your fiesta at home with this delicious taco recipe! The Santa Rita Taco recipe is FULL of flavor and is perfect for a weeknight family meal during the Springtime with your neighbors and family.

Step 1: The Chili Lime Rub + Chicken Prep
Ingredients:
•1 lb of Chicken breasts pounded to 1/2 inch thick
•2 tablespoons olive oil
•1 teaspoon chipotle chili powder
•1/2 teaspoon ground cumin
•1/2 teaspoon smoked paprika
•1/2 teaspoon onion powder
•1/2 teaspoon garlic powder
•3/4 teaspoon salt & pepper
•1 teaspoon brown sugar
•2 tablespoons of fresh lime juice
•Lime zest from 1 lime
•Marinade the chicken overnight(recommended) or for at least 30 minutes

Step 2: Grill Time!
Instructions:
•Chicken needs to be at room temperature 15-30 minutes before grilling.
•Grease and preheat the grill to medium heat at 375-450°F
•Grill chicken 5-7 minutes per side or until chicken has cooked through to be at 165°F
•Remove chicken and let rest 5 minutes before slicing

Step 3: The Pineapple Salsa

Pineapple Salsa ingredients:
•1/2 ripe pineapple, trimmed and sliced
•1 large red bell pepper sliced quartered (remove seeds)
•1/2 small red onion peeled and cut in half
•1 whole jalapeno
•1/2 cup fresh cilantro chopped
•1 table lime juice
•1/4 teaspoon ground ginger
•1/4 teaspoon ground cumin
•Salt & pepper to taste
•Olive oil

Instructions:

•Grease grill and heat to medium-high heat
•Soak wooden skewers (unless you have metal) for 30 minutes
•Drizzle olive oil on onion and jalapeno
•Add red onion and bell pepper onto a skewer
•Cook onion and bell pepper for 12 minutes
•Grill the pineapple for 8-10 minutes
•Once cool enough mix all the ingredients above
•Can be served immediately (better to chill)

Step 4: Avocado Crema
Avocado Crema Ingredients: 
•1 medium avocado
•1/2 cup sour cream
•2 tablespoons mayonnaise
•1 tablespoon lime juice
•1/2 teaspoon salt
•1/4 teaspoon ground cumin
•1/4 teaspoon garlic powder

Instructions:
•Add all the items listed above into a blender
•Blend until smooth
•Let it chill 4 hours before serving

Step 5: How to assemble Your Rita Taco
•Heat up your flour or corn tortilla in microwave, oven, or grill
•The Base is the Chili Lime Chicken
•Pineapple salsa is the filler
•The Avocado Crema is the Topper
