[Buffalo Cauliflower Bites] 

Healthy, Cauliflower, Tailgate

6 cups of fresh cauliflower florets (Core and Chop Cauliflower Florets) 

2 teaspoons of garlic powder

a pinch of salt and pepper

1 tablespoon butter, melted

3/4 cup Frank’s Redhot  Hot sauce



1.) Preheat oven to 450. Spray baking sheet with cooking oil ( we prefer coconut oil spray). Set aside.

2.) Mix the garlic powder, salt, pepper, melted butter, and hot sauce in a small bowl.

3.) Add the cauliflower into a large gallon- sized bag, pour the buffalo sauce into the bag/ Shake until the cauliflower florets are fully coated. (great step to lets the kids help with)

4.) Bake for 20 minutes.

5.) Serve with ranch or blue cheese, for any even healthier sauce.

1 (16 oz.) can refried bean

1 (1 oz.) package taco seasoning

1 cup guacamole or make homemade guacamole

1 (8 oz.) container sour cream

1 cup chunky salsa or Pico de gallo; or make homemade Pico de gallo

1 cup shredded cheddar or Mexican blend cheese

2 Roma tomatoes, diced

½ bunch of green onions, sliced

1 (2.25 oz.) can of sliced olives, drained

8 (9 oz.) plastic tumblers

Tortilla chips


1.)In a small bowl mix taco seasoning with refried beans. Some people prefer to mix their taco seasoning with the sour cream layer, but I wanted a bright white layer, so I did it with the beans.

2.)In each plastic glass, layer about 2 Tablespoons of the beans, followed by 2 Tablespoons of sour cream, 2 Tablespoons of guacamole, 2 Tablespoons of salsa or Pico de gallo, and 2 Tablespoons of cheese. Make sure you drain your salsa or pico to get the excess liquid out before you pour it on.

3.)Then top with about 1-2 teaspoons of tomatoes, olives, and green onion (If making ahead of time, wait to add these toppings until shortly before serving).
